What’s cookin?

It’s been a while since we’ve talked about recipes. I blame that on the fact that I made a few duds recently (I didn’t think it was possible to make bad fish tacos, but somehow I did). But lately, I’ve made some meals worth mentioning.

First, there was orzo with spinach and pine nuts. The sauteed spinach with red pepper flakes added just the right amount of kick, and the feta cheese didn’t hurt either.

And because I had leftover feta, I made smitten kitchen’s pasta with cauliflower, walnuts and feta. I’ve never cooked with cauliflower, but I thought I’d give it a shot. However, as I was making it, I started to regret it. It just didn’t look that good. But I was totally surprised when I tried it – it was really good! Plus, the cauliflower is really filling, so a small serving goes a long way. My complaint, though, is that this is a TON of food. 1 lb. of pasta + 2 heads of cauliflower = way too much for 1 person. I made this last week, and I’m still working on getting through the leftovers. I highly recommend – even if you’re feeding more than 1 person – to cut this recipe in half. You’ll still have plenty of food! Also, make sure you cut the cauliflower into small pieces. If you leave it in larger pieces, it takes 5,000 years to cook through.

Finally, tonight I made this layered chicken and black bean enchilada casserole. I didn’t expect much from it, but it wound up being really good!

Ethical meat?

I don’t buy meat that often, but I’ve been thinking more about it lately. I found out that I have low iron (which was surprising because I’ve had high enough iron to donate blood for the past couple years). Now I’m taking an iron supplement, but I think it might be good to incorporate more iron-rich food into my diet, especially meat. (Yes, I’m aware that you can get iron from vegetables as well, but non-heme iron – which is what’s found in vegetables – is less available for absorption than heme iron – found in animal sources.) I’m not planning on going meat crazy, but just trying to eat a little more of it.

As I’m thinking about meat again, I came across this post about where to buy ethical meat. (Adam lives in NYC, so his references don’t really apply to a lot of us, but the comments have some interesting links.)

I’m feeling conflicted about what to buy as I balance what I believe to be humane treatment of animals vs. how much I want to spend and how much effort I want to put into finding ethical meat.

alibris-logoThe other day I was looking for a book on Amazon and I was frustrated that even though it was the cheapest used book, by the time I added shipping, it was almost as much as buying a brand new book (and then buying something else to qualify for free shipping – which I didn’t really want to do either). So I did a little searching and came across Alibris. It’s kind of like the Amazon marketplace but it’s only books, music, movies, etc. – like old school Amazon. I was able to get the book from Alibris for a little cheaper than Amazon, and I found a $1 off coupon code, so it worked out. At least I hope it will; I haven’t received the book yet but it’s supposed to be on its way.

Inspiration

Check out this article about a young woman who’s taken her fondness for drawing and turned it into a fun, creative way to earn a few bucks. She draws flowers on slips using Sharpies, and they look kind of cool!

I wanted to highlight this story for a few reasons:

  • She had a slip with a stain on it, and rather than throw it away, she worked with it and made something even better come from it. That’s a life lesson right there!
  • I admire her creativity and boldness. Lots of people doodle, but how many people would put the pen to clothing and just go for out?
  • She attended schools that emphasized art and had parents who, in addition to being artists, encouraged her to explore art. She’s rather lucky in that regard. But it’s a testament to the power of parental support in kids’ hobbies and interests.
  • Even though she’s young, she’s managed to do something that many people twice her age don’t do: Make some cash doing something you enjoy.
  • She uses Sharpies! Sharpies are fun and inexpensive, and slips can be found for fairly cheap. She found a relatively inexpensive hobby and business opportunity.
